Balsamico, the precious “black liquid gold” made in Modena, was once a rare condiment scarcely known even to Italians outside Modena. Today, it is a staple across the world and in most American pantries.
Manicaretti offers the complete range of ages, textures, and flavors—from the authentic Traditional Balsamic of Modena D.O.P. (Tradizionale), Balsamic Condiment (Condimenti) and Balsamic Vinegar of Modena I.G.P. to dressings like Saba and today’s new White Balsamic Condiment.
Our selection features comprehensive offerings from Acetaia Leonardi in Modena and three singular Rustichella d’Abruzzo Balsamic Vinegars made in Modena, that satisfy every chef's and home cook's balsamic needs in the kitchen.
The creation of Balsamico is a very different process from that of any other vinegar. Made from saba (cooked Lambrusco and Trebbiano grape must), it is stored in batterie (sets of wood barrels of different sizes and woods) located in attics, not underground caves—the difference in temperature between summer and winter, and day and night make the “magic” happen and produce a product like no other.
