Bertolini & Figli is a family-run pastry and confectionery company based in Cologna Veneta, the small Veneto town famous for its traditional mandorlato. Founded by Giovanni Fausto Bertolini in the early 1980s, the company grew from a modest workshop created inside the family home into one of the region’s most respected producers of artisanal sweets. Inspired after stepping into a pastry laboratory for the first time, Fausto devoted himself completely to mastering the craft, eventually building the business alongside his wife Patrizia and their children, who continue the family tradition today.
At the heart of Bertolini & Figli’s production is its renowned Finissimo Mandorlato, the company’s most celebrated specialty. Made according to the historic traditions of Cologna Veneta with more than 80% toasted almonds, acacia honey, egg whites, and sugar, the confection is prized for its delicate flavor, extraordinarily high almond content, and signature shattering crunch.
