CBS Sunday Morning: Rolando talks Tortellini in Brodo
Manicaretti's Founder shares his love for the Italian comfort food
Our founder, tastemaker and AUTENTICO cookbook author, Rolando Beramendi was featured on CBS Sunday Morning’s 2020 “Food Issue.”
In the segment, CBS correspondent Seth Doane joins Rolando at Trattoria Cammillo in Florence to learn all about the traditional Italian dish. As Seth notes, while Tortellini in Brodo is typically enjoyed during the holidays, "in 2020, it's welcome in any season."

While making Tortellini in Brodo is quite complicated—so much so that Rolando felt he couldn't appropriately translate it for his cookbook, AUTENTICO—the finished bowl is exquisitely simple and comforting.
“As Leonardo da Vinci said, 'Simplicity is the ultimate art of sophistication,'" said Beramendi.
