Agredolç Vinegar, crafted by the Rovira Carbonell family of Mas d’en Gil, is a “sour-sweet” wine vinegar with layered, complex flavors that reflect both its long barrel-aging and its origins in great wine. Mas d’en Gil winery is located in Priorat, a small, dynamic wine region in southwest Catalonia famous for its bold, full-bodied reds made from Cariñena (Carignan) and Garnacha (Grenache) grapes.

For Mas d'en Gil's standout sour-sweet condiment Agredolç, 100% Priorat red wine is acetified with a 40-year-old mother vinegar, then barrel-aged in a solera dating back to 1958 (in the solera system, vinegars of varying ages are meticulously blended in the barrels to maintain consistently excellent quality and complexity of flavor). A small amount of concentrated grape must is added for sweetness and balance.

This Catalan treasure is exceedingly elegant, with the exact aroma of crema catalana. Its acidity (6.8%) accentuates both its perfume and its deep flavor with notes of dates, tart dried apricots, and hazelnuts—truly a chef’s choice!
