Calissons are often associated with Aix-en-Provence, but they are considered a delicacy all across France. These iconic, almond-shaped confections (created to resemble the almonds that flourish in Provence) are made with ground almond paste (French marzipan), candied melon and orange, and are topped with white royal icing.

Tender and succulent—and made without fillers—calissons command a price that is worthy of the tasty treasures that they are. In France, this Provençal specialty is strongly associated with luxurious gifting and are de rigueur as a hostess gift.
