"Speciali" Porcini are a precious selection of premium young porcini mushrooms, chosen for their quality and size. After harvest, they are dried to preserve their robust aroma and characteristic flavor.

Oliveri Dried Porcini Mushrooms are pantry powerhouses. Once rehydrated, these high-quality mushrooms become meaty and tender, perfect for elevating risotto, pasta, farro dishes, and more. Oliveri especially recommends using them in side dishes to accompany meat.

To rehydrate porcini:

  • Make sure you rinse the dried porcini mushrooms under running water to clean any remaining debris.
  • Submerge them in warm water for at least 15 minutes.
  • Reserve and strain the flavorful soaking liquid to add rich, mushroom earthiness to soups, stews, and sauces. 
  • The drained mushrooms are ready to be used!
  • Cook them for no longer than 15 minutes to ensure they retain their meaty texture and strong aroma.
