Yellow Cherry Tomato Sauce
This sauce is Basilicata in a jar! Sweet, yet balanced yellow cherry tomato passata is slowly cooked with fresh, aromatic basil, extra virgin olive oil, and a touch of salt and sugar to create a classic, velvety sauce that pairs perfectly with pasta.
At the Belfiore family farm in Basilicata, sun-ripened heirloom yellow cherry tomatoes are picked at the perfect point of ripeness to ensure unequaled color and flavor. The cherry tomatoes are blanched for a few seconds to remove their peels, passed through a mill, and sieved to produce a full-bodied sauce.
Suggestions for use: Heat in a saucepan for at least 4 minutes. Drain pasta before it is al dente, mix with the sauce over high flame and serve immediately. To enjoy this superb sauce at its best, keep in the refrigerator after opening and consume within five days.
