Creste di Gallo (meaning “rooster’s crests”) are short, crescent-shaped pasta with ridges and ruffled edges which recall their namesake. The shape's porous surface and hollow curve make it ideal for catching hearty sauces like ragù, as well as for lighter preparations with olive oil, butter, or pesto. Toss with Rustichella d'Abruzzo’s Pesto Genovese and chopped Sundried Tomatoes. Make a pasta al forno (baked pasta) or stir into a creamy, cheesy sauce.
Cooking Time: 8-10 minutes.
