The creation of Balsamico is a very different process from that of any other vinegar. Made from saba (cooked Lambrusco and Trebbiano grape must), it is stored in batterie (sets of wood barrels of different sizes and woods) located in attics, not underground caves—the difference in temperature between summer and winter, and day and night make the “magic” happen and produce a product like no other.
