Sour Cherry Syrup

The amarene (sour cherry) are referred to as visciole in Cantiano, also known as the dark-red morello cherry. These wild cherries grow on trees smaller than those of regular cherries. The fruit itself is small and crimson-near-to-black in color, and very acidic, almost unpleasantly so when eaten raw.

Ideal for granite and sorbet making, as well as for serving over fruit salads, panna cotta or gelato. Add extra flavor to any sauce for game or dark roasted meats or add a new twist to drinks with Prosecco, martini or a delicious Shirley Temple.

The fruit is pitted and the pulp is pressed to drain overnight. The resulting juice is blended with sugar and reduced until thick. A special blend of spices is mixed in and the syrup is brought back to a simmer.
